Mochi is a Japanese rice cake made of sweet glutinous rice (not the same as gluten). The sweet glutinous rice is soaked over night and cooked, then pounded for hours with a wooden mallet creating a sticky mass that is formed usually in a cube or sphere.

Mochi can also be made from sweet rice flour, known as Mochiko. Mochiko is mixed with water and sweetener to create a sticky mass that is broken down into smaller sizes and dusted with Kinako or potato starch, to prevent sticking.
